Michelle took us on a tour of a parmigiano reggiano factory, a balsamic vinegar producer and a lovely lunch at a hilltop farmhouse / eco lodge. We learned a lot about the techniques needed to produce the food to a high standard of quality. The balsamic vinegar operation (acetaia picci) was a charming small production facility in the home of the Picci family, and really charming to see. The tastings were a highlight of the trip. Michelle is knowledgeable, friendly and energetic. Highly recommended!
